carrot and cardamom cake
A really luxurious carrot cake with a hint of aromatic cardamon. Best eaten on the day it is made due to being low in fat so reducing its keeping properties.

Serves 6
2 carrots , finely grated
juice and rind 1 small orange
black seeds from 8 cardamon pods, ground in a pestle and mortar
100ml milk
2 large eggs
25g granular Canderel
100ml light olive oil or sunflower oil
350g self raising flour
50g raisins, chopped
FOR THE TOPPING
250g low fat cream cheese
1/2 tsp vanilla essence
1tbsp granular Canderel
FOR THE ORANGE SYRUP
1 large orange
4tbsp granular Canderel
Preheat the oven to 180C/gas mark 5. Grease and line a 23cm square cake tin. Combine the carrots, orange juice, zest , ground cardamom seeds and milk in a small bowl and set aside. With electric beaters whip the eggs and granular Canderel until thick and creamy. Gradually add the oil, beating well. Fold the flour into the mixture alternating with along with the raisins and carrot mixture. Spoon into the cake tin and bake for 40 - 45 minutes until a skewer inserted in the cake comes out clean. When cooked transfer the cake to a wire rack and leave to cool.
For the orange syrup, peel the skin from the orange and cut into fine strips. Place in a small saucepan with the juice from the orange and the Canderel. Gently bring to a simmer and cook the orange strips for about 5 minutes until softened and the orange juice has reduced slightly and is syrupy.
For the topping beat together the cream cheese with the vanilla essence and the granular Canderel. Spread over the top of the cake and serve cut into squares with a drizzle of orange syrup.My son has braces ,I want to bake a cake using canderel ,anyone have recipes that i can use.?
all the info I just read on the Canderel website says to use it measure for measure in anything you are cooking.
So pick a cake recipe your son likes and change the sugar to Canderel.
To make a good icing make sugar syrup using the Canderel to soft ball stage and beat into egg white like you were making Divinity. Spread on cake.

Any recipes for eggless pineapple cookies or cake?
Eggless Pineapple Cake
Ingredients:
1-1/4 all-purpose flour
1/2 can (200 gm) sweetened condensed milk
1/3 cup pineapple juice
1/4 cup butter
2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
Method:
Preheat oven to 350 F.
Grease and dust a 6 inch baking pan.
Sift together the flour, baking powder, soda and salt.
Melt the butter. Mix together with pineapple juice and condensed milk.
Add the liquids to the flour mixture and with an electric beater stir well, making sure there are no lumps and the mixture looks creamy.
Pour the mixture into the greased pan.
Bake in the pre-heated oven at 350 F for 10 mins.
Reduce the temp to 300 F and bake for a further 10 mins.
Cool the cake.
Tips:
Sometimes a cake doesn't rise because baking powder and baking soda not fresh. To test baking powder's effectiveness mix 1 teaspoon baking powder with 1/2 cup hot water and the mixture should bubble.

Turn out of tins with the decorated side uppermost and allow to cool. Spread the plain half with cream. Sandwich together with the fruit side on top.

1 (8 ounce) container sour cream
2 eggs
1 cup semi-sweet chocolate chips or cherry chips or peanut butter chips, etc

Combine all ingredients in a batter bowl.
Pour into a small microwave safe baking dish such as the Pampered Chef mini baker.
Cover baker with a plate.
';Bake'; on high in the microwave for 13 minutes.
Let stand for 5 minutes (do not remove the plate), then invert on to plate.
