My son has braces ,I want to bake a cake using canderel ,anyone have recipes that i can use.?

carrot and cardamom cake


A really luxurious carrot cake with a hint of aromatic cardamon. Best eaten on the day it is made due to being low in fat so reducing its keeping properties.

Serves 6


2 carrots , finely grated


juice and rind 1 small orange


black seeds from 8 cardamon pods, ground in a pestle and mortar


100ml milk


2 large eggs


25g granular Canderel


100ml light olive oil or sunflower oil


350g self raising flour


50g raisins, chopped








FOR THE TOPPING


250g low fat cream cheese


1/2 tsp vanilla essence


1tbsp granular Canderel








FOR THE ORANGE SYRUP


1 large orange


4tbsp granular Canderel





Preheat the oven to 180C/gas mark 5. Grease and line a 23cm square cake tin. Combine the carrots, orange juice, zest , ground cardamom seeds and milk in a small bowl and set aside. With electric beaters whip the eggs and granular Canderel until thick and creamy. Gradually add the oil, beating well. Fold the flour into the mixture alternating with along with the raisins and carrot mixture. Spoon into the cake tin and bake for 40 - 45 minutes until a skewer inserted in the cake comes out clean. When cooked transfer the cake to a wire rack and leave to cool.





For the orange syrup, peel the skin from the orange and cut into fine strips. Place in a small saucepan with the juice from the orange and the Canderel. Gently bring to a simmer and cook the orange strips for about 5 minutes until softened and the orange juice has reduced slightly and is syrupy.





For the topping beat together the cream cheese with the vanilla essence and the granular Canderel. Spread over the top of the cake and serve cut into squares with a drizzle of orange syrup.My son has braces ,I want to bake a cake using canderel ,anyone have recipes that i can use.?
all the info I just read on the Canderel website says to use it measure for measure in anything you are cooking.





So pick a cake recipe your son likes and change the sugar to Canderel.





To make a good icing make sugar syrup using the Canderel to soft ball stage and beat into egg white like you were making Divinity. Spread on cake.

Eggless Pineapple Cake





Ingredients:


1-1/4 all-purpose flour


1/2 can (200 gm) sweetened condensed milk


1/3 cup pineapple juice


1/4 cup butter


2 teaspoon baking powder


1/2 teaspoon salt


1 teaspoon baking soda





Method:





Preheat oven to 350 F.


Grease and dust a 6 inch baking pan.


Sift together the flour, baking powder, soda and salt.


Melt the butter. Mix together with pineapple juice and condensed milk.


Add the liquids to the flour mixture and with an electric beater stir well, making sure there are no lumps and the mixture looks creamy.


Pour the mixture into the greased pan.


Bake in the pre-heated oven at 350 F for 10 mins.


Reduce the temp to 300 F and bake for a further 10 mins.


Cool the cake.





Tips:





Sometimes a cake doesn't rise because baking powder and baking soda not fresh. To test baking powder's effectiveness mix 1 teaspoon baking powder with 1/2 cup hot water and the mixture should bubble.


To test efficacy of baking soda's effectiveness mix 1/4 teaspoon baking soda with 2 teaspoons of vinegar and the mixture should actively bubble.Any recipes for eggless pineapple cookies or cake?

Pineapple Upside-down Cake





Ingredients:





1 tin condensed milk.


5 oz. Plain flour.


1/2 tspn. vanilla essence.


1 1/2 tspn instant coffee.


1/4 tspn. Bi- carb.


1/8- pint water.


2 oz. melted butter.


1 tspn baking powder.





Decorations:





Cherries, pineapple pieces, 1 oz. Brown sugar, 4 oz. Cream.





Method:





Melt the butter in bottom of sandwich tin and arrange pineapple and cherries, sprinkling with the brown sugar.Grease another sandwich tin. Sieve all the ingredients together in a bowl. Add the milk, water, essence, butter and mix to a soft dropping consistency.Divide the mixture between the two tins, bake at 400 f until golden brown and set (35-40 mins.). Turn out of tins with the decorated side uppermost and allow to cool. Spread the plain half with cream. Sandwich together with the fruit side on top.

1 c. sugar


1/3 c. water


1/3 tsp. cream of tartar





Boil slowly without stirring until syrup spins a 6-8 inch thread (240 degrees). While syrup is cooking, beat until stiff enough to hold a point: 2 egg whites (1/3 cup). Pour hot syrup very slowly in a thin stream into stiffly beaten egg whites, beating constantly. Add 1 1/2 teaspoons vanilla. Beat until frosting holds its shape. Spread on cake.

Waldorf-Astoria Red Velvet Cake


1/2 cup shortening


1 1/2 cups sugar


2 eggs


2 ounces red food coloring


2 tablespoons cocoa (heaping)


1 cup buttermilk


2 1/4 cups cake flour

FROSTING

Red Velvet Cake


2录 cups All-purpose flour, sifted


1 tsp Salt


2 Tbsp Cocoa


2 oz red food coloring (鈮坢easure is 录 cup or 4 tbsp)

2 Large Eggs


1 cup Buttermilk

1 tsp Baking soda


Preheat oven to 350掳F. Grease and flour two 9-inch cake pans. Combine the sifted flour and salt, and set aside. Put the cocoa in a small glass bowl, and add the food coloring gradually, stirring until mixture is smooth. Set aside. Cream together the shortening and sugar, beating for 4 or 5 minutes at medium speed in your electric mixer until fluffy. Add the eggs, one at a time, beating for at least 30 seconds after each addition. At low speed of your mixer, add the flour mixture to the sugar mixture alternately with the buttermilk and vanilla, scraping down the sides of the bowl as necessary. Add the cocoa/food coloring mixture, mixing until color of batter is uniform. Do not overbeat; overbeaten cake batter will result in a tough cake. Turn off your mixer. In a small bowl, mix the vinegar with the baking soda. It will foam up. Stir it briefly to mix, and then add it to the cake batter, folding it in to incorporate well, but do not beat. Pour the batter into the prepared cake pans, and bake in a 350掳F oven for 25 to 30 minutes, or until a cake tester comes out clean. Allow layers to cool on a rack for 10 minutes before turning out. Let cake cool completely before frosting.

4 Egg whites (at room temperature)


Combine sugar, cream of tartar, salt and water in heavy saucepan. Cook over medium heat, stirring constantly, until mixture is clear. Cook until mixture reaches 240掳F on a candy thermometer (soft ball stage).


Beat egg whites until soft peaks form. Let mixer continue to run and slowly pour the sugar mixture in a thin stream down the side of the mixer bowl (don't let the sugar mixture come into contact with the beaters). Continue beating until stiff peaks form and frosting thickens to desired consistency.

I wouldn't buy it. Just take a normal red velvet cake, experiment on it until you get it until it's ';famous'; tasting. $50 is alot for a recipe....

    1.Preheat oven to 350 degrees F (175 degrees C).

    * 9'; cake pans


    * Parchment Paper


    * 4 sticks butter


    * 1 cup unsweetened cocoa powder, sifted


    * 5 Godiva milk chocolate candy bars


    * 1 Godiva white chocolate candy bar


    * 2 tsp. vanilla


    * 5 cups confectioners' sugar


    * 1/3 cup Godiva Milk Chocolate Liqueur


    * 3 tbsp. heavy cream or regular milk


    * Bailey's Irish Cream


    * 4 Hersey candy bars


    * 1 15 1/2 oz. can Hershey's Syrup


    * 2 cups sugar (white)


    * 4 eggs


    * 3 1/2 cups all-purpose flour


    * 1 cup buttermilk


    * 1/2 tsp. soda (baking)


    * 1 cup nuts (optional)








    Step1


    Beat 2 sticks softened butter until smooth, adding 5 cups sifted confectioners' sugar and 1 cup sifted unsweetened cocoa to butter. Using low speed, add 1/3 cup Godiva Liqueur and slowly add 1 to 3 tbsp. heavy cream until right buttercream consistency. Set aside.


    Step2


    Grate coarsely the Godiva white chocolate candy bar and 1 Godiva milk chocolate candy bar. Refrigerate. Melt 4 Godiva milk chocolate candy bars, 4 Hershey candy bars and the 15 1/2 oz. Hershey's Syrup over low heat.


    Step3


    Cream 2 sticks butter and add 2 cups sugar; add 4 eggs, one at a time, beating well. Add cooled chocolate mixture, mixing well.


    Step4


    Combine 3 1/2 cups flour, 1/2 tsp. soda and a pinch of salt. Slowly add flour mixture to buttermilk alternately, ending with vanilla and pecans last.


    Step5


    Place batter in 9'; parchment-lined cake pans and place in preheated 350 degree oven for 25 minutes or until done. Remove layers to wire racks and cool completely. Cut each layer in half, making six layers.


    Step6


    Place a cake layer on plate. Make holes in each layer and spoon or brush on Bailey's Irish Cream, soaking layer well. Add buttercream icing. Continue doing all layers with Bailey's Irish Cream and buttercream icing.


    Step7


    Ice the sides and top of cake with remaining buttercream. Cover the cake with coarsely grated Godiva milk chocolate candy bar and Godiva white chocolate candy bar.     The best advice I can give you on having a moist chocolate cake is make sure that you do not over bake it! Chocolate is very easy to over bake making it dry. If your cake has released from the side of the pan in the oven, it is over done. A cake should test done when you can touch the top of the cake and it will spring back to the touch. If it stays indented, then it needs to bake longer. If it does not spring back but stays firm, it is over baked.

    1 14 oz. can sweetened condensed milk

    3 heath bars, crushed





    Heat oven to 350 F. Grease and flour 9 x 13 inch pan. Prepare cake mix as directed on package; pour into prepared pan. After 10 minutes of baking, sprinkle with chocolate chips. Continue baking until cake is done. While cake is still hot, poke holes in it with handle of wooden spoon. Pour sweetened condensed milk over cake; let cool. Top with caramel sauce, then whipped topping. Sprinkle with candy bars.

    FOR THE CAKE:


    1 cup milk


    4 oz. unsweetened chocolate, broken into chunks


    2 cups all-purpose flour


    1⁄2 tsp. salt

    1 cup granulated sugar


    1 cup vegetable shortening


    3 large eggs


    1 tsp. vanilla extract








    FOR THE ICING:


    2 cups granulated sugar


    1⁄4 cup light corn syrup

    1⁄2 cup (1 stick) sweet butter


    2 oz. unsweetened chocolate


    1⁄4 tsp. salt

    1. For the cake: Scald milk in a small saucepan. Remove from heat, add chocolate, and cover. Set aside for 5 minutes. Stir until smooth.








    2. Preheat oven to 350°. Grease three 9'; cake pans and line with rounds of greased wax paper. Sift flour and salt together. Dissolve baking soda in 1⁄3 cup hot water.








    3. In a mixer, cream sugars into shortening until fluffy. Add one egg at a time, continuing to beat well. Add flour and chocolate mixtures alternately, beginning and ending with flour. Beat in soda water and vanilla.








    4. Divide batter equally among pans, and smooth it. Bake for 30 minutes, or until a toothpick stuck into cakes comes out clean. Cool for 10 minutes, then turn out of pans.








    5. For the icing: Place sugar, corn syrup, milk, butter, chocolate, and salt in a saucepan and cook over low heat until melted. Over high heat boil for a minute or so (or until mixture reaches 220° on candy thermometer).








    6. Pour icing into a small mixing bowl. Beat at medium speed until slightly cooled. Add vanilla. Increase speed and beat until icing is workable.








    7. Working fast before icing sets, spread between layers and on top of cake.












    Have a look at the cakes on www.taste.com.au - there are all sorts of cakes - the mars bar cake is particularly yum! if you leave it in the fridge overnight, the next day it is moist and chewy. You can either make it as a slice, or as a round cake....I add macadamias to it.

    Lemon Sponge Cake:


    4 large eggs, separated


    2/3 cup sugar


    1 lemon, zested


    1/2 teaspoon vanilla


    1/2 cup all-purpose flour


    1/2 cup cornstarch


    Lemon Curd:


    6 egg yolks


    1/2 cup sugar


    1/2 cup fresh lemon juice


    4 ounces (1 stick) unsalted butter, cut into pieces





    Citron Syrup:


    1/2 cup sugar


    1/2 cup lemon-flavored vodka





    Meringue Icing:


    1 1/2 cups sugar


    2 tablespoons light corn syrup


    1/3 cup cold water


    3 egg whites


    1/2 teaspoon cream of tartar


    Pinch salt


    1 1/2 teaspoons vanilla extract


    1 tablespoon fresh lemon juice


    1 tablespoon hot water





    Lemon Sponge Cake: Preheat the oven to 350 degrees F. Lightly grease and line the bottom of a 9-inch springform pan with parchment paper and set aside.


    In a bowl fitted with an electric mixer, whip the egg yolks, 1/3 cup of the sugar, lemon zest, and vanilla on medium-high speed until thick and almost doubled in volume. (The yolks will form slowly dissolving ribbons when the whip is lifted out.)





    In a clean bowl, whip the egg whites on medium speed until frothy. Gradually add the remaining 1/3 cup of sugar, and whip on high speed until stiff peaks form. Fold the egg whites into the egg yolk mixture, being careful not to over mix. Sift half of the flour and cornstarch into the egg mixture, and gently fold to incorporate. Repeat with the remaining flour and cornstarch. Pour the batter into the prepared pan and bake for 20 minutes.





    Turn the cake180 degrees F, and bake for an additional 15 to 20 minutes, or until a toothpick comes out clean and the cake starts to pull away from the sides of the pan. Remove from the oven and cool on a wire rack.





    Lemon Curd: In the top of a double boiler, or in a stainless steel bowl, whisk together the yolks, sugar, and lemon juice. Place over simmering water and whisk until thickened. Remove from the heat and whisk in the butter until all incorporated.





    Cover with plastic wrap, pressing down against the surface to prevent a skin from forming. Refrigerate until cool, about 3 hours or overnight.





    Citron Syrup: In a small, heavy saucepan, combine the sugar and vodka. Gently heat, stirring occasionally, until the sugar dissolves.





    To assemble the cake: Slice the cake into 3 layers horizontally. Place the top layer of cake in the bottom of the springform pan and brush with 1/3 of the citron syrup. Spread 1 cup of lemon curd on top and smooth evenly. Repeat with the remaining 2 cakes layers, citron syrup and lemon curd. Refrigerate while making the Meringue Icing.





    In a small, heavy saucepan, combine the sugar, corn syrup, and cold water. Bring to a boil, stirring until the sugar dissolves. Boil, uncovered, until the syrup reaches the soft ball stage (240 degrees F) on a candy thermometer. Remove from the heat.





    Meanwhile, in a large bowl, beat the egg whites, cream of tartar, and salt with an electric mixer until frothy. With the machine running, slowly pour the syrup down the sides of the bowl into the whites (being careful not to pour the syrup into the moving wire whisk). When all the syrup has been added, add the vanilla and continue beating until the mixture has cooled and is fluffy, about 3 minutes. Add the lemon juice and water, and set aside.





    Remove the cake from the refrigerator and unwrap. Remove the sides of the pan and spread the icing in a thin layer over the sides and top of the cake. Put the remaining icing in a pastry bag fitted with a star tip and decoratively pipe rosettes on top of the cake.





    Refrigerate until ready to serve. Prior to serving, with a blowtorch, brown the meringue lightly.Are there any recipes out there titled ';Lemon Vodka Cake';?

    Preheat the oven to 350 degrees F. Grease and flour a 13 by 9-inch baking pan.





    Combine the sugar, salt, and flour in a large mixing bowl. Bring the butter, oil, cocoa, and 1/4 cup water to a boil in a saucepan. Add to the flour mixture.





    Beat together the eggs, baking soda, buttermilk, and vanilla. Add to the chocolate mixture, mix well, and pour into the prepared pan. Bake for 25 minutes.





    While the cake is baking, make the icing by melting the butter in the cocoa and milk over low heat. Bring the mixture to a boil, then remove from the heat. Stir in the confectioners' sugar. Slowly mix in the nuts and the vanilla. Take the cake from the oven, and when it cools a bit cover it with miniature marshmallows. Pour the warm icing over the cake and the marshmallows.     Neiman Marcus II Cake





    INGREDIENTS:


    18.25 ounce package yellow cake mix


    4 eggs


    1/2 cup butter


    8 ounces cream cheese


    4 cups confectioners' sugar





    Preheat the oven to 350 degrees F (175 degrees C). Grease on 13x9 inch baking pan.





    Combine the yellow cake mix, 2 of the eggs, and the butter or margarine mix well. The batter should be stif. Spread the batter into the prepared pan.





    Combine the cream cheese, confectioners' sugar and the remaining 2 eggs. Mix well and pour over the top of the cake batter.





    Bake at 350 degrees F (175 degrees C) for 35 minutes.

    This is VERY easy to make and absolutely delicious:





    Fettuccini Carbonara - with a nice Caesar salad, or some nice garlic toast, you'd have the perfect meal for a date!





    5 teaspoons olive oil


    4 shallots, diced


    1 large onion, cut into thin strips


    1 pound bacon, cut into strips


    1 clove garlic, chopped


    1 (16 ounce) package fettuccini pasta


    3 egg yolks


    1 cup heavy cream


    3/4 cup shredded Parmesan cheese


    salt and pepper to taste





    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.


    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.


    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper. Serves 6

    1 teaspoon unsweetened cocoa powder, for dusting


    1 (1 ounce) square semisweet chocolate





    Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, stirring constantly. Remove from heat and whip yolks until thick and lemon colored.


    Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.


    Split the lady fingers in half, and line the bottom and sides of a large glass bowl. Brush with coffee liqueur. Spoon half of the cream filling over the lady fingers. Repeat ladyfingers, coffee liqueur and filling layers. Garnish with cocoa and chocolate curls. Refrigerate several hours or overnight.


    To make the chocolate curls, use a vegetable peeler and run it down the edge of the chocolate bar. Serves 12

    In a large bowl, cream together the shortening, brown sugar and 1 cup white sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with 1 1/2 buttermilk, mixing just until incorporated. Stir in pecans. Pour batter into prepared pans.


    Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.


    To make the frosting: In a large bowl, combine butter, 1/2 teaspoon salt, 1 teaspoon vanilla and about 1 cup of the confectioners' sugar. Beat well, then gradually beat in the remaining confectioners' sugar alternately with 1/4 cup buttermilk. Beat until smooth and creamy and spread on cake.



    ATTA CAKE (Whole Wheat Flour)








    INGREDIENTS:





    Atta : 1-1/4 cups


    Banana : 3 ripe (Mashed)


    Sugar : 1 cup


    Eggs : 3


    Refined oil : 1/2 a cup


    Jam : 1/4th cup


    Baking soda : 1tsp


    Raisin/Walnuts : optional


    Vanilla Essence : 1/2 tsp ( can avoid)


    Cocoa : optional








    METHOD:





    Beat oil, sugar and eggs till light and fluffy.


    Add banana and beaten jam.

    This is my recipe for Trinidadian rum cake - alson known as black cake or Christmas cake... It's really strong and is an acquired taste .. I think it's worth the effort.





    Ingredients


    1 pound currants


    1 pound raisins


    1 pound prunes


    1 pound dried figs


    1 (16 ounce) jar maraschino cherries, drained


    1/2 pound mixed peel


    1/4 pound almonds, chopped


    1 tablespoon angostura bitters


    2 1/2 cups dark Jamaica rum





    Caramelizing Sugar





    3/4 pound brown sugar


    1/2 cup boiling water





    Final Cooking


    2 teaspoons grated lime peel


    2 teaspoons vanilla


    4 cups flour


    4 teaspoons baking powder


    1 teaspoon ground cloves


    1 pound butter (4 sticks) softened


    2 1/4 cups sugar


    9 large eggs





    METHOD


    Equipment: Two 9x5x3 inch loaf pans or 1 10 inch tube pan.





    Prep Day





    Chop currants, raisins, prunes, figs and cherries. Put in large bowl with mixed peel and almonds. Stir to combine. Sprinkle on bitters and pour rum over mixture. Soak for a minimum of 24 hours, extending to one month. (Dream about this cake for whatever period of time you have chosen.)





    Caramelizing Sugar





    Put brown sugar in heavy pot. Stir, letting sugar liquefy. Cook over low heat until dark, stirring constantly, so sugar does not burn. When almost burnt, remove from heat and stir in hot water gradually. Mix well, let cool, and pour into container for use in final cooking.





    Final Cooking





    Preheat oven to 250掳F.





    Bring fruit from its resting place. Stir lime peel, vanilla and caramelized sugar into fruit. Mix well. Set aside.





    Sift together flour, baking powder and cloves. Set aside.





    Cream together butter and sugar until mixture is light. Add the eggs, one at a time until blended.





    Stir in dry ingredients gradually. When mixed, stir in fruit mixture.





    Pour into tins lined with buttered parchment paper or waxed paper. Place pan (or pans) in large shallow pan of hot water. Cook in preheated 250掳F oven for 2 1/2 - 3 hours or until a tester inserted in center of cake comes out clean. Cake should have shrunk from sides of pan.





    Cool for 24 hours in pans. When cool, moisten with rum, remove from tins, and wrap in aluminum foil or a rum drenched cloth. Cakes may be stored for a period of time. If keeping for any length of time, check occasionally to add more rum.








    Cranberry Sauce - This is the one I make every year


    1 bag of cranberries


    1 cup of orange juice


    1/4 cup Grand Marnier


    1 1/2 cups of sugar (or more, depending on how sweet you like it)


    1 tablespoon of fresh grated ginger





    Put all the ingredients in a saucepan and simmer on low to medium flame until the cranberries have burst and begin to break down. Taste .. add more sugar if necessary at this point while it's warm. It will thicken as it cools.I want to make cranberry sauce and rum cake from scratch. any easy but good recipes?
    Here is an easy rum cake recipe:





    INGREDIENTS


    1 cup chopped walnuts

    Glaze

    Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.





    Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.





    Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.





    To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.








    I make it every year and it gets great comments and everyone always asks for the recipe.





    I don't have one for cranberry sauce as I just get cranberries, orange peel, and read the directions on the bag of cranberries, those recipes are always easy.

    2 cups yellow corn meal


    2 cups water


    2 tablespoons unsalted butter

    My grandmother ';threw'; some stuff together many years ago giving this easy cake the family name ';Throw-Together.'; So easy my teenage son bakes it!!





    2 cups sugar, 2 cups flour, 1 tsp vanilla, 3 eggs, 1 cup milk, 3/4 cup oil. Mix all ingredients together. Pour into greased and floured cake pan and bake at 350 degrees for 30-40 mins. Sometimes takes a little longer too cook; but my oven doesn't cook as hot as Memaw's does.





    My family likes the gooey, stick outside of the cake, so our favorite pan is a bundt pan. This is awesome alone - but if you must, you can top with cool whip and strawberries. Hope you enjoy as much as my family does!!
    Carrot Cake





    This one is a family favourite. You don't even have to be too accurate with the ingredients. I don't usually bother to ice it...








    3 cups plain flour


    1 cup crushed canned pineapple, undrained


    1 teaspoon of vanilla essence


    2 cups castor sugar


    1 1/2 teaspoons bicarbonate of soda


    1 cup walnuts, chopped


    2 cups carrot, grated


    4 eggs


    1 1/2 cups oil





    Sift flour, sugar and bi-carb soda. Add pineapple, carrots, eggs, oil, vanilla and nuts. Beat together. Cook in a moderate oven for one hour.





    Cinnamon Tea Cake





    This makes a big but rather flat cake...perfect for a baking dish! And feeding a big group when you need cake fast! Freezes really well too...and no icing!!





    2 cups self raising flour


    1 cup castor sugar


    4 tablespoons custard powder


    4 eggs


    1 cup milk


    8 1/2 oz butter





    Beat all ingedients together for 10 minutes, or until combined. Bake in a 160 degree oven for 45 to 60 minutes. Melt extra butter and brush over cake with cinnamon, sugar and nutmeg.
    Pig Out Cake


    1 box of yellow cake mix


    1 small can (11oz) of mandarin oranges, undrained


    1/2 c. oil


    4- eggs


    Icing:


    12-16 oz Cool whip (I use 16 oz)


    1 lg. can crushed pineapple, undrained


    1 sm. pkg. instant vanilla pudding


    Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.


    Combine icing ingredients and spread on cooled cake.


    Cake does need to be refrigerated until ready to serve.


    * I sometimes add flaked coconut to the icing mixture.





    Death by Chocolate


    1 box chocolate cake mix


    4 sm boxes of Instant Choc. pudding


    4- 8-oz. cool Whip


    * oreo cookies crumbs (optional)


    * melted chocolate (optional)


    * chopped heath bars (optional)


    * chocolate chips (optional)


    This really looks nice in a glass pyrex dish or a trifle bowl.


    Bake cake according to directions.


    and prepare pudding according to box.


    When cake is cooled.


    Layer as follows:


    half the cake - crumbled


    half the pudding ( 2 boxes prepared)


    16 oz. cool whip


    optional ingredients


    Repeat-


    * If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.

    Pineapple Upside down cake.





    betty crocker yellow cake mix


    large sliced pineapple can


    marchino cherries


    a little light brown sugar





    * open and drain pineapple juice into a measureing cup





    *make the cake batter, add water to juice for the ';water'; in the recipe and make the batter.





    * take the retangle cake pan, press a thin layer of brown sugar on the bottom, take the pineapple sliced and line the entire bottom of the pan, and put the cut cherries inside the pineapple hole.





    * Gently pour the batter over it. AND Follow the baking instructions.





    Pineapple Upside down cake!


    That easy and super pretty.





    Be very careful when its completely cool and then turn it over.





    I normally get a thick piece of cardboard Box and cover it in thick aluminum foil and place it on top of the pan, and gently turn it over and leave it like that, so it will fall out naturally.

    I am not so brilliant at making cakes, but there is an easy recipe for apple cake (versunkener apple cake) on the site below.


    I have made it loads of times and it is dead easy, you can't fail.
    This is so easy and so good....not to mention convenient.





    Take a cake mix....any flavor. Buy the corresponding flavor of instant pudding.


    Make the cake mix as directed except add one box of pudding and an EXTRA egg. Bake as directed.





    For the frosting, use one package of INSTANT pudding beat with 1 envelope Dream Whip, and one and a half cups of cold milk. When cake is cool, whip this up and throw it on top of the cake. It is SOOOOOO good. EVeryone will think you slaved.





    A great combo is vanilla cake and pudding, same for frosting and then cut strawberries in half to put all over the top edge.





    Double chocolate is great, too.





    Pistachio pudding with yellow cake is awesome.

    Put dry ingredients in mug, and mix well


    Add the egg and mix thoroughly.


    Pour in the milk and oil and mix well.


    Add the chocolate chips (if using) and vanilla


    and mix again.





    Microwave for 3 minutes at 1000 watts. The cake

    1 cup fresh raspberries -- rinsed and drained





    Preheat oven to 350. Butter and flour a 9 inch round tart pan with removable rim. In a 2 to 3 quart pan over low heat, stir butter and chocolate just until melted, about 5 minutes. Remove from heat and mix in granulated sugar, pecans, eggs, and vanilla. Add flour and stir to mix well. Spread batter in pan. Next to rim, distribute berries in a band about 2 inches wide. Gently press fruit into batter. Bake until top, at outside edge, cracks and feels firm to the touch, 45 to 50 minutes. Let cool in pan on rack. Dust with powdered sugar before serving.

    1 Box German chocolate cake mix


    7 ounces Sweetened condensed milk


    陆 Jar caramel sauce;, (12-ounce jar)


    1 Container; (8 oz) non-dairy whipped topping, thawed


    6 Heath candy bars; crushed, (up to 8)





    Bake cake in 9 by 13-inch cake pan, as directed on box. Let it cool slightly and poke little holes in the top of the cake with a pencil. Dribble sweetened condensed milk and caramel sauce over cake. Let stand for over an hour until the cake has completely cooled. Frost with whipped topping and sprinkle crushed candy bars over that. Refrigerate

    Clara's Chocolate Cake


    3 c AP flour


    2 c sugar


    1/2 c cocoa


    1 tsp salt


    1 tsp baking soda


    2 tsp baking powder


    2 c COLD water


    1 c vegetable oil


    1 tsp vinegar


    2 tsp vanilla





    Sift dry ingredients into a large bowl. Add wet ingredients and mix well. Pour batter into a greased and floured 9 x 13 inch pan. Bake at 350 F for 30 -35 minutes.


    This cake is not recommended as a layer cake.


    Try Almond or Orange Extract instead of Vanilla.


    Try dusting pan with cocoa instead of flour. Way more chocolatey!


    Keeps for 1 week. lol mine never lasts that long.





    Best Ever Carrot Cake


    1 c corn or canola oil (veg oil works too)


    1 1/4 c honey


    4 eggs


    2 c AP flour


    2 tsp each, baking powder %26amp; soda


    1 tsp salt


    1 Tbsp cinnamon


    3 c grated carrots


    1 c chopped pecans (optional)





    Mix oil and honey. Add eggs one at a time, beating well after each. Whisk dry ingreds. to blend, then add to egg mixture just til blended. Fold carrots and nuts into batter and divide into 2 greased and floured 8 x 8 inch glass dishes. Bake at 325 F for 30 - 35 minutes or til cake tests clean and is just starting to pull away from sides of pan.


    Serve warm as a veggie or cool and frost with cream cheese frosting.


    Metal pans may be used. Adjust temperature to 350 F.

    Get a german chocolate or any other chocolate cake mix, cook as directed, while warm poke holes along the top of it with the round end of a wooden spoon, pour carmel sauce on the top and sprinkle crushed heath bars on top, let set till cool.     You are right, it may take a bit longer to bake. Just closely monitor it....Use the old toothpick trick.......Stick it in the middle of the cake and if it is clean when you pull it out, it is ready. (Of course unless you stick it in an m%26amp;m)





    If the cake is firm to the touch means it may be ready, so does if the edges of the cake pull away from the pan a bit.

    5. Bake at 350 for 40-50 minutes. Cool 15 minutes before removing from pan.


    6. Mix together frosting ingredients to make glaze. Drizzle over top and decorate with reserved 1/4 cup M%26amp;M's.

    I make this with splenda sugar and splenda brown sugar and it tastes the same. I have also put it into a pie tin and just bake it a little longer.

    My grandmother ';threw'; some stuff together many years ago giving this easy cake the family name ';Throw-Together.'; So easy my teenage son bakes it!!





    2 cups sugar, 2 cups flour, 1 tsp vanilla, 3 eggs, 1 cup milk, 3/4 cup oil. Mix all ingredients together. Pour into greased and floured cake pan and bake at 350 degrees for 30-40 mins. Sometimes takes a little longer too cook; but my oven doesn't cook as hot as Memaw's does.





    My family likes the gooey, stick outside of the cake, so our favorite pan is a bundt pan. This is awesome alone - but if you must, you can top with cool whip and strawberries. Hope you enjoy as much as my family does!!

    This one is a family favourite. You don't even have to be too accurate with the ingredients. I don't usually bother to ice it...








    3 cups plain flour


    1 cup crushed canned pineapple, undrained


    1 teaspoon of vanilla essence


    2 cups castor sugar


    1 1/2 teaspoons bicarbonate of soda


    1 cup walnuts, chopped


    2 cups carrot, grated


    4 eggs


    1 1/2 cups oil





    Sift flour, sugar and bi-carb soda. Add pineapple, carrots, eggs, oil, vanilla and nuts. Beat together. Cook in a moderate oven for one hour.





    Cinnamon Tea Cake





    This makes a big but rather flat cake...perfect for a baking dish! And feeding a big group when you need cake fast! Freezes really well too...and no icing!!





    2 cups self raising flour


    1 cup castor sugar


    4 tablespoons custard powder


    4 eggs


    1 cup milk


    8 1/2 oz butter





    Beat all ingedients together for 10 minutes, or until combined. Bake in a 160 degree oven for 45 to 60 minutes. Melt extra butter and brush over cake with cinnamon, sugar and nutmeg.
    Pig Out Cake


    1 box of yellow cake mix


    1 small can (11oz) of mandarin oranges, undrained

    Icing:


    12-16 oz Cool whip (I use 16 oz)


    1 lg. can crushed pineapple, undrained


    1 sm. pkg. instant vanilla pudding


    Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.


    Combine icing ingredients and spread on cooled cake.


    Cake does need to be refrigerated until ready to serve.

    This is my recipe for Trinidadian rum cake - alson known as black cake or Christmas cake... It's really strong and is an acquired taste .. I think it's worth the effort.





    Ingredients


    1 pound currants


    1 pound raisins


    1 pound prunes


    1 pound dried figs


    1 (16 ounce) jar maraschino cherries, drained


    1/2 pound mixed peel


    1/4 pound almonds, chopped


    1 tablespoon angostura bitters


    2 1/2 cups dark Jamaica rum





    Caramelizing Sugar





    3/4 pound brown sugar


    1/2 cup boiling water





    Final Cooking


    2 teaspoons grated lime peel


    2 teaspoons vanilla


    4 cups flour


    4 teaspoons baking powder


    1 teaspoon ground cloves


    1 pound butter (4 sticks) softened


    2 1/4 cups sugar


    9 large eggs





    METHOD


    Equipment: Two 9x5x3 inch loaf pans or 1 10 inch tube pan.





    Prep Day





    Chop currants, raisins, prunes, figs and cherries. Put in large bowl with mixed peel and almonds. Stir to combine. Sprinkle on bitters and pour rum over mixture. Soak for a minimum of 24 hours, extending to one month. (Dream about this cake for whatever period of time you have chosen.)





    Caramelizing Sugar





    Put brown sugar in heavy pot. Stir, letting sugar liquefy. Cook over low heat until dark, stirring constantly, so sugar does not burn. When almost burnt, remove from heat and stir in hot water gradually. Mix well, let cool, and pour into container for use in final cooking.





    Final Cooking





    Preheat oven to 250掳F.





    Bring fruit from its resting place. Stir lime peel, vanilla and caramelized sugar into fruit. Mix well. Set aside.





    Sift together flour, baking powder and cloves. Set aside.





    Cream together butter and sugar until mixture is light. Add the eggs, one at a time until blended.





    Stir in dry ingredients gradually. When mixed, stir in fruit mixture.





    Pour into tins lined with buttered parchment paper or waxed paper. Place pan (or pans) in large shallow pan of hot water. Cook in preheated 250掳F oven for 2 1/2 - 3 hours or until a tester inserted in center of cake comes out clean. Cake should have shrunk from sides of pan.





    Cool for 24 hours in pans. When cool, moisten with rum, remove from tins, and wrap in aluminum foil or a rum drenched cloth. Cakes may be stored for a period of time. If keeping for any length of time, check occasionally to add more rum.








    Cranberry Sauce - This is the one I make every year


    1 bag of cranberries


    1 cup of orange juice


    1/4 cup Grand Marnier


    1 1/2 cups of sugar (or more, depending on how sweet you like it)


    1 tablespoon of fresh grated ginger





    Put all the ingredients in a saucepan and simmer on low to medium flame until the cranberries have burst and begin to break down. Taste .. add more sugar if necessary at this point while it's warm. It will thicken as it cools.I want to make cranberry sauce and rum cake from scratch. any easy but good recipes?
    Here is an easy rum cake recipe:





    INGREDIENTS


    1 cup chopped walnuts

    Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.





    Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.





    To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.








    I make it every year and it gets great comments and everyone always asks for the recipe.





    I don't have one for cranberry sauce as I just get cranberries, orange peel, and read the directions on the bag of cranberries, those recipes are always easy.

    large sliced pineapple can


    marchino cherries


    a little light brown sugar





    * open and drain pineapple juice into a measureing cup





    *make the cake batter, add water to juice for the ';water'; in the recipe and make the batter.





    * take the retangle cake pan, press a thin layer of brown sugar on the bottom, take the pineapple sliced and line the entire bottom of the pan, and put the cut cherries inside the pineapple hole.





    * Gently pour the batter over it. AND Follow the baking instructions.





    Pineapple Upside down cake!


    That easy and super pretty.





    Be very careful when its completely cool and then turn it over.





    I normally get a thick piece of cardboard Box and cover it in thick aluminum foil and place it on top of the pan, and gently turn it over and leave it like that, so it will fall out naturally.

    A great combo is vanilla cake and pudding, same for frosting and then cut strawberries in half to put all over the top edge.

Dribble sweetened condensed milk and caramel sauce over cake. Let stand for over an hour until the cake has completely cooled. Frost with whipped topping and sprinkle crushed candy bars over that. Refrigerate
    These are my 2 favourite cakes. Easy and delicious.





    Clara's Chocolate Cake


    3 c AP flour


    2 c sugar


    1/2 c cocoa


    1 tsp salt


    1 tsp baking soda


    2 tsp baking powder


    2 c COLD water


    1 c vegetable oil


    1 tsp vinegar


    2 tsp vanilla





    Sift dry ingredients into a large bowl. Add wet ingredients and mix well. Pour batter into a greased and floured 9 x 13 inch pan. Bake at 350 F for 30 -35 minutes.


    This cake is not recommended as a layer cake.


    Try Almond or Orange Extract instead of Vanilla.


    Try dusting pan with cocoa instead of flour. Way more chocolatey!


    Keeps for 1 week. lol mine never lasts that long.





    Best Ever Carrot Cake


    1 c corn or canola oil (veg oil works too)


    1 1/4 c honey


    4 eggs


    2 c AP flour


    2 tsp each, baking powder %26amp; soda


    1 tsp salt


    1 Tbsp cinnamon


    3 c grated carrots


    1 c chopped pecans (optional)





    Mix oil and honey. Add eggs one at a time, beating well after each. Whisk dry ingreds. to blend, then add to egg mixture just til blended. Fold carrots and nuts into batter and divide into 2 greased and floured 8 x 8 inch glass dishes. Bake at 325 F for 30 - 35 minutes or til cake tests clean and is just starting to pull away from sides of pan.


    Serve warm as a veggie or cool and frost with cream cheese frosting.


    Metal pans may be used. Adjust temperature to 350 F.

    APPLE SAUCE CAKE





    1/2 cup butter or shortening


    2 cups sugar


    2 eggs


    1 1/2 teaspoons baking soda


    1 1/2 teaspoons salt


    1/4 teaspoon baking powder


    3/4 teaspoon cinnamon


    1/2 teaspoon cloves


    1/2 teaspoon allspice


    1/2 teaspoon nutmeg


    1/2 cup water


    1 1/2 cups canned applesauce


    2 1/2 cups flour





    Beat all together in one bowel until creamy mixture.





    bake at 350 degrees until done.
    Get a german chocolate or any other chocolate cake mix, cook as directed, while warm poke holes along the top of it with the round end of a wooden spoon, pour carmel sauce on the top and sprinkle crushed heath bars on top, let set till cool. Its beyond amazing!! The carmel goes through the holes and into the cake.... YUM YUM!!

    i want to bake an m%26amp;m cake... the kind with the candies mixed into the batter b4 being baked.





    I have a recipe for M%26amp;M squares using M%26amp;Ms n dessicated coconut. Its perfect xcept the recipe uses a flat baking dish n produces a 1inch thick cake. I need to bake a round 9inch cake which is at least 3inches thick. If i use the same recipe it would need a longer time in the oven wouldnt it? Pls help...M%26amp;M cake recipes anyone?
    You are right, it may take a bit longer to bake. Just closely monitor it....Use the old toothpick trick.......Stick it in the middle of the cake and if it is clean when you pull it out, it is ready. (Of course unless you stick it in an m%26amp;m)





    If the cake is firm to the touch means it may be ready, so does if the edges of the cake pull away from the pan a bit.

    Christmas M %26amp; M Cake or...Anytime Cake





    CAKE:





    1 cup butter -- softened


    1 cup sugar


    1/2 cup light brown sugar


    3 eggs


    1 cup milk


    1 teaspoon vanilla


    2 1/2 cups flour


    2 teaspoons baking powder


    1/8 teaspoon salt


    1-16 oz. pkg. red and green M%26amp;M's (Any Color Will Do)





    FROSTING:





    1 cup powdered sugar


    juice of 1 lemon


    2 teaspoons water





    1. Cream together butter and sugars until light. Add eggs, one at a time, beating well after each addition.


    2. Stir together milk and vanilla.


    3. Mix together flour, baking powder, and salt. Alternately add flour and milk to creamed mixture.


    4. Reserve 1/4 cup M%26amp;M's for topping. Stir remaining M%26amp;M's into batter. Pour into greased and floured 12-cup bundt or tube pan.


    5. Bake at 350 for 40-50 minutes. Cool 15 minutes before removing from pan.


    6. Mix together frosting ingredients to make glaze. Drizzle over top and decorate with reserved 1/4 cup M%26amp;M's.





    NOTE: The chocolate from the M%26amp;M's melts and goes to the bottom of the pan (top when turned out of pan) and the red an green M%26amp;M's leave colorful trails throughout the cake.

    Chocolate Chip Cookie Cake





    2陆 cup all-purpose flour


    陆 tsp baking soda


    录 tsp salt


    1 cup brown sugar


    陆 cup sugar


    1 cup butter, softened


    2 lg eggs

    1 bag semi sweet chocolate chips


    1 bag m%26amp;m baking bits





    Heat oven to 300掳 F





    Mix flour, baking soda and salt together, set aside.





    Mix sugars together in a large bowl. On medium speed, add butter just till well mixed. Add eggs and vanilla, mix till blended. On low speed add flour mixture. Fold in chocolate chips and m%26amp;m's.





    Put all the batter on an ungresed pizza pan. Shape it how you like. I make it the shape of the pizza pan ( 2 inches from the rim, otherwise it will go over) Bake 20-25 minutes or untill done.





    I make this with splenda sugar and splenda brown sugar and it tastes the same. I have also put it into a pie tin and just bake it a little longer.

    6 tbsp.Coke


    3 tbsp. cocoa


    1 box powdered sugar

    Bake 30-35 minutes. Remove cake from oven and frost while still warm.





    Broiled Peanut Butter Frosting





    Preheat broiler. Cream Butter, sugar, and peanut butter. Beat in milk, then nuts. Spread over warm cake. Place frosted cake under broiler, about 4 inches from heat source. Broil only a few seconds, until topping starts to bubble. Watch carefully!





    Cool at least 30 minutes before serving.
