If you're interested in using cake mixes to make interesting cakes, google Cake Doctor. There is a chocolate cake that uses pumpkin to make it moist.
Pumkin Pie
Why not try a Damper.

-2 good cups of Self-Raising Flour,

-pinch of Salt,

-dab of Butter,

-enough Milk and/or Water and/or Beer to make a ball of dough[usually about 1 and half cups total],

Flatten dough to about 2 inches high and cook in a hot [camp] oven for about 30 minutes until golden brown.

Delicious cut into thick slices while it's still warm, with butter and syrup or honey, or Vegemite.
