Looking for cake recipes?

Does anyone have any cake recipes that people are always asking for the recipe. I'm looking to try some new recipes that taste great. Would enjoy icing and filling recipes as wellLooking for cake recipes?
yes! My mom's chocolate cake is DIVINE, and people are constantly asking for the recipe. I'll go look it up...





Okay, it's called the ';Best Ever Chocolate Cake';








CAKE:


*Sift together 2 cups flour and 2 cups sugar into a bowl.





*Bring 1 stick of butter, 4 tbsp. cocoa, 1/2 cup crisco, and 1 cup of water to a boil. Remove from heat and pour over the flour/sugar mixture. Stir.


*Add 1/2 cup buttermilk, 1 tsp. vanilla, 1 tsp. cinnamon, 1 tsp. soda, and 2 beaten eggs. Stir.





*Pour mixture into a greased 9x13 pan. Cook at 350 for about 30 minutes. Just keep an eye on it. It's a pretty normal cake, so it'll pull away from the edges of the pan and spring back when you push it. I rarely time it, I just watch it.








ICING:


*Put 1 stick of butter, 5-6 tbsps of milk, and 4 tbsp cocoa in a pot. Bring to a boil. Remove from heat, and beat in 1 box of sifted powdered sugar. Add 1 tsp. vanilla. Pour over cake. (I'm not positive that we use a whole box of powdered sugar, just taste test it.... it will be very sweet tasting.)

Okay, I can't resist, I have to tell you about another, it's kind of a weird cake, but it is so so so so so so good. It's called a ';Lemon-Lime'; cake, and you put it in the fridge. Don't let the name throw you off, it really doesn't taste anything like lemon or lime : ) It's delish!





*Make a packaged lemon cake. Let it cool.


*Poke holes with a straw all the way through the cake, all across the cake, about one inch apart.


*Mix 1 cup of boiling water with a small package of lime jello, stir till dissolved.


*Take straw or eyedropper to drop about a teaspoon of the lime jello liquid in each of the holes. (beware, this is a very sticky job)





FROSTING: This recipe is on the back of the ';Dream Whip Whipped topping mix'; box.....





1/2 cups cold milk


1 envelope of Dream Whip


1 four ounce package of Jello Instant Vanilla pudding.


Mix on low until blended.


Mix on high for 4-6 minutes, or until soft peaks form.





Frost the cake, and refrigerate.

Apricot Sacher Cake





Ingredients:


125g superfine flour


60g cocoa powder


80g apricot jam


250g sugar


125g butter


4 egg, separate egg white and egg yolk


additional 160g apricot jam, heated











For garnish:


125g dark chocolate, chopped


125c.c. double cream














Steps


1. Brush a thin layer of melted butter on the inside of a 9 inches cake tin. Cover the bottom and the inside of the side with baking paper.


2. Sift flour and cocoa powder into a bowl, dig a hold in the middle of the it. Mix apricot jam, butter and sugar in a small pot, heat up with low heat until the ingredients melt and mix well. Remove the pot from heat, set cool and pour into the flour and cocoa powder mixture, mix until smooth. Add egg yolks, mix well.


3. Beat egg white in another bowl with a electric mixer until egg white turns foamy. Spoon egg white into the flour mixture, mix well, and pour into the cake tin.


4. Preheat oven at 180oC. Bake the cake at 180oC for 50 minutes. Leave the cake in the tin for 15 minutes after baking and remove it from the tin and let cool.














To garnish:


1. Divide the cake horizontally into 3 even layers, spread 1/5 additional apricot jam on each of the inner side of the top and the bottom layers, and spread 1/5 additional apricot jam on each side of the middle layer, and assemble the cake. Finally, spread the last 1/5 additional apricot jam on top of the cake.


2. Melt chopped dark chocolate with double cream in a small pot over low heat, mix until smooth. Remove from heat and let cool and thickened, and pour onto the cake. Level the top and the side and set until hardened. Before serving, could be decorated with chocolate peel and icing sugar.





The cake can be stored for 2 days in a vacuumed container.
