coconut cream cake:

1 cake mix, (which ever you prefer..I find the white to be yummy) and the chocolate to taste like a mounds bar the next day. lemon, orange, or pineapple have a great tropical flavor, and you can mix those together, like a layer of orange on top, and pineapple on the bottom, etc.

mix as directed, except substitute coconut milk +2t of coconut extract for the water

bake as directed.

as soon as cake is done, poke holes throughout with the handle end of a mixing spoon. or kabob spikes

coconut mix:

take remaining coconut milk, 3t of coconut extract, cream of coconut (add until your taste of sweetness) and whipping cream to thin it out.

pour over cake, making sure to fill in the holes in the cake first.

frosting:

1tub of coolwhip

about a cup of whipping cream

remaining coconut extract

powered sugar (add as much as you want for desired sweetness)

beat on high until peaks form, and spread over completely cooled cake.

sprinkle with shredded coconut (optional), or pinapple chunks, pecans, halved maraschino cherries..etc..whatever you prefer.

it taste great that day..but even better the next, I think because the cake needs to time to absorb all the moisture evenly.
