INDIVIDUAL CHEESECAKES
1 box Nabisco vanilla wafers
1 (8 oz.) pkg. cream cheese
1 egg
1/4 c. sugar
Blueberries, strawberries or cherries
Put 1 wafer in each cupcake paper. Beat cream cheese, egg and sugar until smooth. Fill cupcake paper about 1/2 full. Bake 12-15 minutes at 350 degrees. When cool top with cherries or blueberries and whipped cream.

MINI CHEESECAKES
2 (8 oz.) cream cheese, soft
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 tbsp. lemon juice

Nabisco Nilla wafers
fruit pie topping
Foil cupcake baking cups
Beat ingredients well. Put a Nabisco Nilla wafer in each foil cupcake baking cup. Makes 18-20 individual cheesecakes. Fill foil cupcake baking cup about 2/3 full. Bake at 375 degrees for 17 minutes. Top each individual cheesecake with a spoonful of fruit pie topping when cool.

Easy peanut butter cocoa flavored cookies without turning on the oven.';
Original recipe yield: 4 dozen.
Cook Time:15 MinutesReady In:25
INGREDIENTS:
2 cups white sugar
3 tablespoons unsweetened cocoa powder
1/2 cup margarine
1/2 cup milk
1 pinch salt
3 cups quick cooking oats
1/2 cup peanut butter
1 teaspoon vanilla extract
DIRECTIONS:
In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.
Add quick cooking oats, peanut butter, and vanilla; mix well.
Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.
Brown Sugar Frosting

recipe yield: 2 cups.
INGREDIENTS:
1/2 cup packed dark brown sugar
1 tablespoon white corn syrup
2 tablespoons water
1 cup confectioners' sugar
DIRECTIONS:
Cook all ingredients except confectioner's sugar in iron skillet until smooth. Remove and add sugar. Spoon/drizzle over cookies. Frosting will harden when cool!
Apple Spice Cake

recipe yield: 1 tube cake.
INGREDIENTS:
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon salt
1 cup butter, softened
2 cups white sugar
4 eggs
1 teaspoon baking soda
1 tablespoon warm water
1 teaspoon vanilla extract
3 apples - peeled, cored and chopped
1/2 cup raisins
1/4 cup confectioners' sugar for dusting
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.
