Powdered sugar

1 pint basket (about 3 1/4 cups) California strawberries

To make Cake:

Heat oven to 375 degrees. Line 18- x 12-inch jellyroll - sheet pan with aluminum foil; coat with vegetable cooking spray.

Bake in center of oven about 10 minutes until springy to the touch.

To make Strawberry Filling:

In mixer bowl whip cream to form soft peaks. Beat in sugar to form stiff peaks. Fold in lemon curd to blend thoroughly. Mix in chopped strawberries. Gently unroll cake. Spread strawberry mixture evenly on cake and re-roll. Place seam-side-down. Dust with powdered sugar. Cut into 8 (about 1 3/4-inch) equal slices. Place each slice on serving plate. Frosting Recipe

You'll need:

1/2 cup (1 stick) butter or margarine

2/3 cup HERSHEY'S Cocoa

3 cups powdered sugar

1/3 cup milk

1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
I almost make all of my cakes based on a simple vanilla 4-3-2-1 cake.

4-3-2-1 cake recipe: 4 eggs + 3 cups self-rising flour + 2 cups sugar + 1 cup softened butter/margarine + 1 cup milk + 1 teaspoon vanilla extract. Bake at 350F for ~25 minutes. Check with a toothpick for doneness.

It is the base for 99% of my cakes. I add pumpkin puree with pumpkin spice for a great pumpkin cake. I add shredded carrot and shredded apple for a healthy cake (with apple pie spice it really rocks). I add dried fruit and lemon zest for a sweet cake. The list goes on and on with what you can add to the base recipe. Enjoy.
