Any great sponge cake recipes?? =D?

yeh..! and could any of you please like give me tips on how to make layered cakes.. intend to do one for christmas...! thanks..Any great sponge cake recipes?? =D?
Layered Sponge Cake





Ingredients:


1 cup butter


1 cup sugar


2 cups flour, all-purpose


2 teaspoons baking powder


4 large eggs


1 cup heavy whipping cream


2 teaspoons sugar


1 each raspberry jam jar





Prep:


Cream the butter until light. Slowly add the sugar. Beat until light and fluffy. Add eggs one at a time and beat well. Fold in the sifted flour and baking powder.





Pour mixture into prepared 8 inch round pans. Bake 25-30 minutes at 375 degrees until the cake pulls gently from sides or cake tester remains clean. (When pressing lightly on top of cake, no impression is left.) Cool in pans for 10 minutes. Cool completely on wire rack.





Whip cream and sugar to soft peaks. Place doily on cake plate. Put one cake layer on doily. Spread with raspberry jam and top with whipped cream. Place second layer bottom side up onto the filling. Sprinkle with powdered sugar. Garnish with raspberries and mint leaves.Any great sponge cake recipes?? =D?
I hope ths is what you're looking for. Here's a recipe that I don't think is too bad:


3 eggs


1 cup sugar


4 tbsp. warm water


1 cup flour


1 level teaspoon baking powder


1 teaspoon flavoring extract





In a medium sized bowl, add eggs and beat 1 minute at half speed. Add sugar and beat together 5 minutes more until thick and lemon colored. Add 4 Tablespoons warm water and mix again 1 minute. Sift together flour and baking powder and stir into wet ingredients. Do not overmix once the flour is added or cake will be tough. Add flavoring extract (vanilla, etc). Place in a shallow pan. Oven at 400 degrees for 5 minutes then at 375 degrees for 20 minutes.





In order to make layered cakes, I usually see if I can put the cake batter in 2 or more pans. When the cakes are done, I stack them or put frosting or something inbetween the layers. Hope I've been some help! MERRY XMAS!!!!
