Does anyone have any good recipes for a banana cake with a cream cheese icing?

Old Fashioned Banana cake





2/3 c. sugar


1;/3 c. soft shortening


2 eggs


3 tbsp. sour milk


1 c. mashed ripe bananas


2 c. sifted flour


1 tsp. baking powder


1/2 tsp. baking soda


1/2 tsp. salt


1/2 c. chopped nuts








Mix together thoroughly sugar, shortening and eggs. Stir in sour milk and bananas. Sift together and stir in flour, baking powder, soda and salt. Blend in nuts. Pour into well greased 9 x 5 x 3 inch loaf pan. Let stand 20 minutes before baking. Bake 50 to 60 minutes at 350 degrees.

Cream Cheese Pecan Frosting





8 oz Cream cheese; softened


1/2 c Butter or margarine; softened


1 lb Powdered sugar; sifted


1 ts Vanilla extract


1 c Finely chopped pecans








Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy. Stir in pecans. Yield: about 3 cups.Does anyone have any good recipes for a banana cake with a cream cheese icing?

HUMMING BIRD CAKE (this cake is very yummy)





3 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon salt


2 cups of sugar


1 teaspoon ground cinnamon


3 large eggs, beaten


1 cup vegetable oil


1 and 1/2 teaspoon vanilla extract


1 (8-oz) can crushed pineapple, undrained


1 cup chopped pecans


2 cups chopped bananas





-combine first five ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. ( do not beat). Stir in vanilla, pineapple, 1 cup pecans, and bananas


-pour batter into three greased and floured 9-inch round cakepans Bake at 350 for 25 minutes or until a wooden tooth pick insterted in center comes out clean. cool in pans on wire racks 10 minutes, remove from pans and cool completely on wire racks.

1(8oz) package cream cheese, softened


1/2 cup butter or margarine, softened


1(16oz) package of powdered sugar, sifted


1teaspoon vanilla extract





-beat cream cheese and butter at medium speed w/ electric mixer until smooth. Gradually add powdered sugar, beating at low speed until light and fluffy, stir in vanilla.Then you can spread on the cake and you can enjoy. I hope you like it.
